1 lb cooked Hanukkah brisket, finely chopped
2 cups mashed potatoes
1/2 cup finely chopped onion, sautéed
1/4 cup chopped fresh dill
Salt and black pepper to taste
1 recipe pierogi dough (store-bought or homemade)
1 egg, beaten (for egg wash)
Melted butter or sour cream, for serving
Instructions
In a bowl, combine the chopped brisket, mashed potatoes, sautéed onion, and dill.
Season the filling with salt and pepper to your liking. Mix well.
Prepare your pierogi dough according to package instructions or your preferred recipe.
Roll out the dough thinly on a floured surface. Cut out circles using a cookie cutter or glass.
Place a spoonful of the brisket and potato filling onto the center of each dough circle.
Fold the dough in half, enclosing the filling, and press the edges firmly to seal. Crimp with a fork if desired.
Bring a large pot of salted water to a boil.
Carefully drop the pierogi into the boiling water, cooking in batches if necessary to avoid overcrowding.
Cook for 3-5 minutes, or until the pierogi float to the surface.
Remove the cooked pierogi with a slotted spoon and drain well.
For a golden finish, you can lightly pan-fry the boiled pierogi in butter until golden brown.
Serve hot with melted butter or a dollop of sour cream.

Ensure the brisket is finely chopped to create a smooth filling.
Adjust seasoning to your taste.
If using homemade pierogi dough, allow it to rest as per your recipe’s instructions.
