Hanukkah Cinnamon Braid Bread

A delightful Hanukkah treat, this cinnamon-sugar braided bread is perfect for your holiday table. It’s a sweet and soft bread with a warm cinnamon filling, sure to be a favorite.

  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup unsalted butter, melted and slightly cooled
  • 4 to 4 ½ cups all-purpose flour, plus more for dusting
  • For the Filling:
  • ½ cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • 3 tablespoons ground cinnamon
  • For the Glaze:
  • 1 large egg, beaten
  • 2 tablespoons milk
  • Granulated sugar for sprinkling

Instructions

  1. In a large bowl, combine warm milk and yeast. Let stand for 5-10 minutes until foamy.
  2. Stir in granulated sugar, salt, eggs, and melted butter.
  3. Gradually add 4 cups of flour, mixing until a soft dough forms.
  4. Turn dough onto a lightly floured surface and knead for 8-10 minutes, adding more flour as needed, until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down dough and divide into three equal portions.
  7. On a lightly floured surface, flatten each portion into a rectangle about 8×10 inches.
  8. In a small bowl, mix together softened butter, brown sugar, and cinnamon for the filling.
  9. Spread the filling evenly over each rectangle of dough, leaving a small border.
  10. Roll up each rectangle tightly, lengthwise, to form a log.
  11. Pinch the seams to seal.
  12. Place the three logs side-by-side. Pinch the ends together.
  13. Braid the three logs together, gently pressing the seams together as you go.
  14. Tuck the ends under to seal.
  15. Place the braided bread on a baking sheet lined with parchment paper.
  16. Cover and let rise for another 30-45 minutes.
  17. Preheat oven to 375°F (190°C).
  18. In a small bowl, whisk together the egg and milk for the glaze. Brush over the braided bread.
  19. Sprinkle generously with granulated sugar.
  20. Bake for 25-30 minutes, or until golden brown and cooked through.
  21. Let cool on a wire rack before slicing and serving.
