This one-pan chicken dish features chicken coated in a sweet and spicy harissa honey glaze, roasted alongside your favorite vegetables. It’s a simple, flavorful meal perfect for a weeknight dinner.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1/4 cup harissa paste
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, cumin, salt, and pepper.
  3. In a small bowl, whisk together the harissa paste, honey, lemon juice, and the remaining 1 tablespoon of olive oil.
  4. Add the bell peppers and red onion to the bowl with the chicken. Pour the harissa honey glaze over everything and toss to coat evenly.
  5. Spread the chicken and vegetables in a single layer on the prepared baking sheet.
  6. Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  7. Garnish with fresh cilantro before serving.

Notes

  • You can substitute chicken breasts for thighs, but adjust cooking time to prevent drying out.
  • Feel free to add other vegetables like zucchini, broccoli, or cherry tomatoes.
  • Adjust the amount of harissa paste to control the spice level.
