  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon ground ginger
  • Pinch of ground cloves
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup Greek yogurt (plain, non-fat)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, combine the grated carrots, whole wheat flour, baking soda, cinnamon, nutmeg, ginger, and cloves. Mix well.
  3. In a separate bowl, whisk together the unsweetened applesauce, maple syrup, Greek yogurt, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the chopped nuts and raisins, if using.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  9. Cut into bars and serve.
