A simple and delicious herb-roasted turkey breast, perfect for a smaller Thanksgiving gathering. This recipe focuses on a flavorful, juicy turkey breast without the fuss of a whole bird.

  • 1 (3-4 pound) boneless, skin-on turkey breast
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey breast dry with paper towels.
  3. In a small bowl, mix together the olive oil, rosemary, thyme, garlic powder, onion powder, salt, and pepper.
  4. Rub the herb mixture all over the turkey breast, ensuring it’s evenly coated.
  5. Place the turkey breast in a roasting pan.
  6. Pour the chicken broth into the bottom of the roasting pan.
  7. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C).
  8. Baste the turkey with the pan juices every 20-30 minutes during cooking.
  9. Once cooked, remove the turkey from the oven and let it rest for 10-15 minutes before carving.
  10. Carve the turkey and serve with the pan juices.

Notes

  • For extra crispy skin, you can increase the oven temperature to 400°F (200°C) for the last 15-20 minutes of cooking, watching carefully to prevent burning.
  • Feel free to add other herbs like sage or marjoram to the rub.
  • If you don’t have chicken broth, turkey or vegetable broth can be used.
