  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon sesame oil, divided
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 cup frozen peas and carrots
  • 2 large eggs, lightly beaten
  • 4 cups cooked white rice, chilled
  • 2 tablespoons unsalted butter
  • 1 tablespoon mirin (optional)
  • Salt and black pepper to taste

Instructions

  1. In a bowl, toss chicken pieces with 1 tablespoon soy sauce and 1 teaspoon sesame oil. Let marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  4. Push vegetables and garlic-ginger mixture to one side of the skillet. Pour beaten eggs onto the empty side and scramble until cooked.
  5. Add chilled rice, cooked chicken, peas and carrots, remaining 1 tablespoon soy sauce, remaining 2 teaspoons sesame oil, and butter to the skillet.
  6. Stir-fry everything together until well combined and heated through, about 5 minutes. If using, stir in mirin for extra flavor.
  7. Season with salt and pepper to taste.

  • Using day-old, chilled rice is key for the best fried rice texture.
  • Feel free to add other vegetables like chopped onion, bell peppers, or broccoli.
