Fix that bland, low-protein waffle routine! We took the concept of a high-protein breakfast and perfected it using cottage cheese for incredible fluffiness and a major protein boost. This recipe is easy, low sugar, and perfect for your morning workout fuel.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/2 cup oat flour (or gluten free blend)
  • 1 scoop vanilla or unflavored whey protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray or oil for the iron

Instructions

  1. Preheat your waffle iron and lightly coat the plates with cooking spray or oil.
  2. Place the cottage cheese, eggs, protein powder, oat flour, baking powder, vanilla extract, and salt into a blender.
  3. Blend on high until the mixture is completely smooth. Scrape down the sides if necessary. The batter should be thick.
  4. Pour the batter onto the hot waffle iron. Use the amount needed for your iron size, usually about 1/2 to 3/4 cup.
  5. Cook according to your waffle iron’s directions until golden brown and cooked through, typically 4 to 6 minutes.
  6. Remove carefully and serve immediately with your favorite high-protein toppings.

Notes

  • For a lower-carb option, substitute the oat flour with 1/4 cup almond flour and 1 tablespoon coconut flour.
  • If you do not have a blender, vigorously whisk the ingredients, ensuring the cottage cheese curds are fully broken down before adding dry ingredients.
  • This recipe makes about 3 medium waffles. Scale up ingredients as needed for meal prep breakfast batches.
  • Top with Greek yogurt and berries instead of syrup for a low sugar waffles option.
