  • 1 package (14.1 ounces) refrigerated pie crusts (2 count)
  • 1 wheel (8 ounces) brie cheese, rind removed and cut into small cubes
  • 1 cup whole berry cranberry sauce
  • 1 tablespoon granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin pan.
  2. In a small bowl, mix the cranberry sauce, sugar, and lemon juice. This creates your sweet-tart topping.
  3. Unroll the pie crusts on a lightly floured surface. Use a 3-inch round cookie cutter to cut out circles from the dough. You should get about 18-20 circles per crust.
  4. Gently press each dough circle into the cups of the prepared mini muffin pan.
  5. Place one cube of brie cheese into the bottom of each pastry cup.
  6. Spoon about 1 teaspoon of the cranberry mixture over the brie in each cup. Do not overfill.
  7. Brush the edges of the pastry dough lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  9. Let the bites cool in the pan for 5 minutes before carefully removing them with a small offset spatula. Serve warm.
