Instructions
Combine blueberries, water, and sugar in a medium saucepan.
Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
Reduce the heat to low and simmer for 15 to 20 minutes, stirring occasionally. The berries will break down, and the liquid will reduce slightly.
For a smoother syrup, press the mixture through a fine-mesh sieve into a bowl, discarding the solids. For a thicker, chunkier syrup, skip the straining step.
Stir in the lemon juice.
If the syrup is too thin, return it to the saucepan and simmer for an additional 5 minutes until it coats the back of a spoon.
Let the syrup cool completely before serving or storing. It will thicken more as it cools.
Notes
For a thicker syrup, you can dissolve 1 teaspoon of cornstarch in 1 tablespoon of cold water, then stir this slurry into the simmering syrup during the last 5 minutes of cooking.
This syrup works well as a drizzle over ice cream, mixed into sparkling water, or used in cocktails.
Store the cooled syrup in an airtight container in the refrigerator for up to two weeks.
