  • 1.5 pounds fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, thinly sliced
  • 1 large shallot, minced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1.5 cups milk
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup fried onions (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the green beans in boiling salted water for 5-7 minutes until tender-crisp. Drain and set aside.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the mushrooms and cook until browned, about 5-7 minutes.
  4. Add the shallot and garlic to the skillet and cook for 1-2 minutes until fragrant.
  5. Sprinkle the flour over the mushroom mixture and cook, stirring, for 1 minute.
  6. Gradually whisk in the milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.
  7. Stir in the Dijon mustard, salt, pepper, and nutmeg.
  8. Add the blanched green beans to the sauce and stir to combine.
  9. Top evenly with the fried onions.
  10. Bake for 20-25 minutes, or until the casserole is bubbly and the onions are golden brown.

Notes

  • For homemade fried onions, thinly slice yellow onions, toss with a little flour, and fry in oil until golden brown and crispy.
  • You can use any type of mushroom you prefer.
  • Adjust seasoning to your taste.
