1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1/4 cup honey
1/4 cup soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
Cooked rice or noodles, for serving
Sesame seeds, for garnish (optional)
Chopped green onions, for garnish (optional)
Instructions
In a bowl, toss the chicken pieces with cornstarch and 1 tablespoon of soy sauce.
Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
Add the bell peppers and onion to the skillet. Stir-fry for 3-5 minutes until tender-crisp.
Add the minced garlic and cook for 30 seconds until fragrant.
In a small bowl, whisk together honey, 1/4 cup soy sauce, rice vinegar, and sesame oil.
Pour the sauce into the skillet with the vegetables. Bring to a simmer and cook for 1-2 minutes until the sauce thickens slightly.
Return the cooked chicken to the skillet and toss to coat in the sauce.
Serve immediately over cooked rice or noodles. Garnish with sesame seeds and green onions, if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce.
Feel free to add other vegetables like broccoli, snap peas, or carrots.
