Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons vegetable oil

Instructions

  1. Pat the chicken thighs dry with paper towels. Season lightly with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs in a single layer, working in batches if necessary.
  3. Sear the chicken for 4-5 minutes per side until nicely browned. Remove the chicken and set it aside.
  4. In the same skillet, reduce the heat to medium. Add the minced garlic and ginger. Cook for about 30 seconds until fragrant.
  5. Pour in the honey, soy sauce, and apple cider vinegar. Bring the mixture to a simmer.
  6. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  7. Whisk the slurry into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
  8. Return the browned chicken thighs to the skillet. Spoon the honey garlic sauce over the chicken.
  9. Reduce the heat to low, cover, and simmer for 8-10 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  10. Uncover and allow the sauce to coat the chicken one last time before serving immediately.

Notes

  • For extra stickiness, remove the chicken for the last 2 minutes of cooking and increase the heat to medium-high to let the sauce reduce further before tossing the chicken back in.
  • You can use bone-in, skin-on thighs; increase the simmering time until fully cooked.
  • Serve this over steamed rice or with roasted broccoli.
