1 pound large shrimp, peeled and deveined
1/4 cup honey
3 tablespoons soy sauce (or tamari for gluten-free)
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon lemon juice
1/2 teaspoon black pepper
Pinch of red pepper flakes (optional)

Instructions
If using wooden skewers, soak them in water for at least 30 minutes before use.
In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, lemon juice, black pepper, and red pepper flakes to create the sauce.
Add the shrimp to the bowl and toss gently to coat them completely in the sauce. Let the shrimp marinate for 15 to 20 minutes. Do not marinate longer than 30 minutes, as the acid can start to cook the shrimp.
Preheat your grill to medium-high heat (about 400°F or 200°C). Clean the grates well and lightly oil them to prevent sticking.
Thread the marinated shrimp onto the prepared skewers, leaving a small space between each piece.
Place the skewers directly on the hot grill grates. Grill for 2 to 3 minutes per side.
During the last minute of cooking, brush any remaining sauce over the shrimp to create a sticky glaze.
Remove the shrimp from the grill immediately when they turn pink and opaque throughout. Overcooking makes them tough.
Serve the shrimp hot, directly off the skewers.
Notes
For easy cleanup and turning, use metal skewers or soak wooden skewers for 30 minutes prior to use.
Serve this shrimp over rice or alongside grilled asparagus or a fresh salad.
If you prefer a thicker glaze, reserve 1 tablespoon of the marinade before adding the raw shrimp, and brush this reserved sauce on during the last minute of grilling.
