1 tbsp vegetable oil
1 lb shrimp, peeled and deveined
2 cloves garlic, minced
1 cup onion, chopped
1 cup frozen peas and carrots mix
3 cups cooked, cold day-old rice
3 large eggs, lightly beaten
1/4 cup soy sauce
3 tbsp honey
2 tbsp rice vinegar
1 tsp sesame oil
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add shrimp and cook until pink, about 2-3 minutes. Remove shrimp and set aside.
Add minced garlic and chopped onion to the skillet. Cook until fragrant, about 1 minute.
Add frozen peas and carrots. Cook for 2 minutes.
Push vegetables to one side of the skillet. Pour beaten eggs onto the empty side and scramble until just set.
Add the cold rice to the skillet. Break it up with a spatula.
Return the cooked shrimp to the skillet.
In a small bowl, whisk together soy sauce, honey, and rice vinegar. Pour the sauce over the rice mixture.
Stir everything together until the rice is evenly coated and heated through.
Drizzle with sesame oil just before serving.
Notes
Use cold, day-old rice for the best fried rice texture.
Do not overcook the shrimp; they finish cooking in the sauce.
