Ingredients
Scale
2 cups water
1 inch fresh ginger root, thinly sliced or grated
1/2 fresh lemon, juiced (about 1 tablespoon)
1 to 2 tablespoons honey (adjust to taste)
Optional: 1 tea bag (black or green)
Instructions
Place the water and sliced or grated ginger into a small saucepan.
Bring the water to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 10 minutes. This extracts the ginger flavor.
Remove the saucepan from the heat. If using a tea bag, steep it now for 3 to 5 minutes, then remove it.
Strain the liquid into a mug, discarding the ginger pieces.
Stir in the fresh lemon juice and honey until the honey dissolves completely.
Taste the tea and add more honey or lemon if you prefer a different balance of sweet and tart.
Notes
For a stronger ginger flavor, simmer the ginger for up to 15 minutes.
Use raw, unfiltered honey for the best flavor and potential soothing properties.
To make this tea iced, prepare it hot, let it cool to room temperature, then pour over ice cubes.
You can make a concentrate by doubling the ginger and water, simmering for 15 minutes, and storing the strained liquid in the refrigerator for up to one week. Dilute with hot water when serving.
