Ingredients
Scale
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
Salt and black pepper to taste
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons apple cider vinegar
1 teaspoon garlic powder
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Season the chicken thighs generously with salt and pepper.
Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for 5 to 7 minutes until the skin is golden brown and crispy.
Flip the chicken thighs.
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and garlic powder to create the glaze.
Brush half of the honey mustard glaze over the seared chicken thighs.
Transfer the skillet to the preheated oven. Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
Remove the chicken from the oven. Brush with the remaining glaze. Let the chicken rest for 5 minutes before serving.
Notes
Searing the skin first gives you that crucial crispness that holds up during baking.
Use good quality Dijon mustard for the best flavor in your glaze.
If you do not have an oven-safe skillet, you can sear the chicken in a regular skillet and then transfer it to a baking dish.
