  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Pinch of salt
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Pat the rinsed chickpeas very dry with a clean kitchen towel or paper towels. Moisture is the enemy of crispiness.
  3. Toss the dried chickpeas with the olive oil and a pinch of salt. Spread them in a single layer on the prepared baking sheet.
  4. Roast for 15 to 20 minutes, shaking the pan halfway through, until the chickpeas start to look slightly golden and firm.
  5. While the chickpeas roast, whisk together the honey, soy sauce, sesame oil, and ground ginger in a small bowl until smooth. This is your glaze.
  6. Remove the chickpeas from the oven. Immediately pour the honey sesame glaze over the hot chickpeas. Toss gently but quickly to coat every piece evenly. The heat helps the glaze adhere.
  7. Return the coated chickpeas to the oven for an additional 3 to 5 minutes. Watch closely; the honey can burn fast. You want the glaze to bubble and become sticky.
  8. Remove from the oven. Sprinkle with sesame seeds immediately. Let them cool slightly on the pan before serving; they will get stickier as they cool.

Notes

  • For extra crunch, you can air fry the chickpeas at 375 degrees F for 10-12 minutes before glazing.
  • Taste your glaze before adding it to the hot chickpeas; adjust the honey or soy sauce to match your preference.
  • Store leftovers in an airtight container at room temperature for up to 3 days. They may lose some crispness.
