Ingredients

  • Chicken Drumsticks: 8
  • Honey: 1/4 cup
  • Soy Sauce: 1/4 cup
  • Garlic: 3 cloves, minced
  • Ginger: 1 teaspoon, grated
  • Rice Vinegar: 1 tablespoon
  • Sesame Oil: 1 teaspoon
  • Cornstarch: 1 teaspoon
  • Water: 1 tablespoon
  • Sesame Seeds: for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. This is your marinade.
  3. Place the chicken drumsticks in a large zip-top bag or dish. Pour half of the marinade over the chicken. Seal and massage to coat. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  4. Place the marinated drumsticks on the prepared baking sheet, discarding the remaining marinade used for soaking.
  5. Bake for 25 minutes.
  6. While the chicken bakes, prepare the glaze. Pour the reserved half of the marinade into a small saucepan. Bring to a simmer over medium heat.
  7. In a separate small bowl, whisk the cornstarch and 1 tablespoon of water until smooth. Pour this slurry into the simmering sauce. Stir constantly until the sauce thickens into a sticky glaze, about 1 minute. Remove from heat.
  8. Remove the chicken from the oven. Brush the thickened glaze generously over all sides of the drumsticks.
  9. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is bubbly and dark.
  10. Remove from the oven. Let the chicken rest for 5 minutes before serving. Garnish with sesame seeds.

Notes

  • For extra crispy skin, broil the chicken for the last 2-3 minutes, watching closely to prevent burning.
  • If you do not have fresh ginger, use 1/2 teaspoon of ground ginger in the marinade.
  • This pairs well with simple steamed rice and broccoli.
