  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1/2 cup panko breadcrumbs
  • Vegetable oil for frying
  • 1/4 cup honey
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. Place the cut chicken pieces in a bowl.
  2. Prepare three shallow dishes. In the first, mix flour, salt, pepper, and garlic powder. In the second, place the beaten eggs. In the third, place the panko breadcrumbs.
  3. Dredge each chicken piece first in the flour mixture, shaking off excess.
  4. Dip the floured chicken into the egg wash, letting excess drip off.
  5. Coat the chicken thoroughly in the panko breadcrumbs, pressing lightly to adhere.
  6. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
  7. Carefully fry the chicken bites in batches, turning occasionally, until golden brown and cooked through, about 4-6 minutes.
  8. Remove the chicken from the oil and place it on a wire rack lined with paper towels to drain excess oil.
  9. While the chicken drains, prepare the glaze. In a small saucepan, combine honey, sriracha, soy sauce, rice vinegar, and sesame oil.
  10. Heat the glaze mixture over medium heat, stirring constantly until it just begins to simmer and thickens slightly, about 2 minutes. Do not boil rapidly.
  11. Remove the glaze from the heat. Add the fried chicken bites to the saucepan.
  12. Toss the chicken gently until every piece is evenly coated in the sticky sauce.
  13. Transfer the coated chicken bites to a serving platter.
  14. Garnish immediately with sesame seeds and chopped green onions. Serve warm.

Notes

  • For extra crispiness, you can bake the coated chicken at 400°F (200°C) for 15-20 minutes instead of frying. Adjust glaze time if baking.
  • Adjust the amount of sriracha to control the heat level to your preference.
