Instructions
Prepare the chicken dredge. Mix flour, cornstarch, salt, pepper, and paprika in one shallow dish.
Whisk eggs and milk in a second shallow dish.
Dip each chicken piece first into the flour mixture, then into the egg wash, and back into the flour mixture, pressing to coat well.
Heat oil in a deep skillet to 350°F (175°C). Fry chicken until golden brown and cooked through, about 5-7 minutes. Drain on a wire rack.
Make the hot honey glaze. Combine hot sauce, honey, apple cider vinegar, and melted butter in a small saucepan over medium heat. Simmer for 3 minutes until slightly thickened.
Toss the fried chicken pieces in the hot honey glaze until fully coated.
Lightly toast the slider buns with softened butter.
Assemble the sliders: Place coated chicken on the bottom bun. Top with a pickle slice if desired, then place the top bun on.
