  • 1 pound ground breakfast sausage
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped red bell pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 2 tablespoons chopped fresh cilantro, for garnish
  • Optional toppings: sour cream, salsa, sliced jalapeƱos, avocado

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion and red bell pepper to the skillet with the sausage. Cook until the vegetables are softened, about 5-7 minutes.
  4. Stir in the chili powder, cumin, garlic powder, salt, and pepper. Cook for 1 minute more until fragrant.
  5. Add the rinsed black beans and the can of diced tomatoes with green chilies (undrained) to the skillet. Stir to combine and bring to a simmer. Cook for 5 minutes, allowing the flavors to meld.
  6. Spread half of the shredded Monterey Jack and cheddar cheeses in an even layer on the bottom of a 9×13 inch baking dish.
  7. Spoon the sausage and bean mixture evenly over the cheese.
  8. Top with the remaining shredded cheeses.
  9. Make four indentations in the cheese mixture, spaced evenly apart. Carefully crack one egg into each indentation.
  10. Bake for 15-20 minutes, or until the egg whites are set and the yolks are still slightly runny.
  11. Garnish with fresh cilantro and serve immediately with your favorite optional toppings.

Notes

  • For a spicier dish, add a pinch of cayenne pepper or some diced jalapeƱos to the sausage mixture.
  • If you prefer your eggs fully cooked, bake for an additional 5 minutes or until they reach your desired doneness.
  • This recipe can be made ahead of time. Prepare the sausage and bean mixture and store it in the refrigerator. When ready to serve, spread it in the baking dish, top with cheese and eggs, and bake.
