Make individual, portable S’mores hand pies with a flaky crust, gooey chocolate, and toasted marshmallow filling.

  • 2 sheets refrigerated pie crusts
  • 1 cup semi-sweet chocolate chips
  • 1 cup miniature marshmallows
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 2 tablespoons graham cracker crumbs (optional, for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Unroll the pie crusts onto a lightly floured surface. Use a 4-inch round cookie cutter to cut out circles from each crust. You should get about 6 to 8 circles per sheet.
  3. On one half of each circle, place 1 tablespoon of chocolate chips and a small layer of miniature marshmallows. Do not overfill.
  4. Fold the empty half of the dough over the filling to create a half-moon shape. Crimp the edges firmly with a fork to seal the pie completely.
  5. In a small bowl, whisk together the beaten egg and water to create an egg wash. Brush the tops of the hand pies lightly with the egg wash.
  6. Use a sharp knife to cut two small slits in the top of each pie to allow steam to escape during baking. Sprinkle with graham cracker crumbs if desired.
  7. Bake for 12 to 15 minutes, or until the crust is golden brown and puffed.
  8. Remove from the oven and let the hand pies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm for the best gooey texture.

Notes

  • For extra indulgence, use dark chocolate chunks instead of chips.
  • If you want a toasted marshmallow look, briefly place the baked pies under the broiler for 30 seconds after they come out of the oven, watching them closely to prevent burning.
  • These pies can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add a few extra minutes to the bake time if baking from cold.
