Create tender, tangy chicken with this easy Instant Pot Balsamic Chicken recipe. It’s a perfect set-and-forget meal for busy weeknights.

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Turn the Instant Pot to the Sauté function and add olive oil.
  3. Sear the chicken thighs for 2-3 minutes per side until golden brown.
  4. Remove chicken from the pot and set aside.
  5. Deglaze the pot by adding a splash of chicken broth and scraping up any browned bits.
  6. Add the balsamic vinegar, remaining chicken broth, soy sauce, honey, minced garlic, and thyme to the pot. Stir to combine.
  7. Return the chicken thighs to the pot, ensuring they are mostly submerged in the liquid.
  8. Secure the lid and set the valve to sealing.
  9. Cook on High Pressure for 8 minutes.
  10. Allow for a Natural Pressure Release for 5 minutes, then carefully perform a Quick Release for any remaining pressure.
  11. Remove the chicken from the pot. If the sauce is too thin, you can thicken it by setting the Instant Pot to Sauté and simmering until it reaches your desired consistency.
  12. Serve the balsamic chicken hot, spooning the glaze over the top.

Notes

  • For a thicker sauce, you can reduce the liquid after removing the chicken by using the Sauté function.
  • Feel free to add vegetables like broccoli or carrots to the pot during the pressure cooking cycle.
  • Adjust the sweetness by increasing or decreasing the honey.
