Make tender beef and broccoli quickly using your Instant Pot for a convenient weeknight dinner.

  • 1.5 lbs flank steak, thinly sliced against the grain
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 cup beef broth
  • 1/2 cup soy sauce or tamari
  • 1/4 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 pound broccoli florets
  • 3 tablespoons cornstarch mixed with 3 tablespoons cold water (slurry)

Instructions

  1. In a medium bowl, toss the sliced flank steak with baking soda, 1 teaspoon cornstarch, and salt. Let this sit for 10 minutes. This tenderizes the beef.
  2. Set your Instant Pot to Sauté mode. Add vegetable oil. When hot, brown the beef in batches, removing each batch to a plate once browned. Do not overcrowd the pot.
  3. Add beef broth, soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger to the Instant Pot. Scrape up any browned bits from the bottom of the pot.
  4. Place the trivet or steamer basket inside the pot. Arrange the broccoli florets on top of the trivet.
  5. Secure the lid and set the vent to Sealing. Cook on High Pressure for 1 minute.
  6. When the cooking cycle finishes, perform a Quick Release (QR) of the pressure.
  7. Carefully remove the trivet and broccoli. Set the broccoli aside.
  8. Set the Instant Pot back to Sauté mode (Low). Stir the beef broth mixture until it simmers.
  9. Whisk the cornstarch slurry and slowly pour it into the simmering liquid while stirring constantly. Cook until the sauce thickens, about 1 to 2 minutes.
  10. Return the cooked beef and the steamed broccoli to the pot. Stir gently to coat everything in the sauce.
  11. Serve immediately over rice.

  • The baking soda step is crucial for achieving tender beef in a pressure cooker.
