Make delicious Indian takeout butter chicken at home with this easy Instant Pot recipe. This creamy, flavorful curry is perfect for a quick weeknight meal.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup water
  • 2 tablespoons tomato paste
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Set your Instant Pot to the ‘Sauté’ function. Add olive oil and heat.
  2. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  4. Stir in the ground cumin, coriander, garam masala, turmeric, and cayenne pepper. Cook for 30 seconds, stirring constantly.
  5. Add the chicken pieces to the pot and cook until lightly browned on all sides.
  6. Pour in the crushed tomatoes, heavy cream, and water. Stir in the tomato paste and lemon juice.
  7. Season with salt and pepper.
  8. Cancel the ‘Sauté’ function. Secure the lid on the Instant Pot and set the valve to ‘Sealing’.
  9. Cook on ‘Manual’ or ‘Pressure Cook’ mode on high pressure for 10 minutes.
  10. Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then carefully perform a quick release of any remaining pressure.
  11. Open the lid and stir the butter chicken. Taste and adjust seasoning if needed.
  12. Serve hot, garnished with fresh cilantro.

Notes

  • For a milder curry, reduce or omit the cayenne pepper.
  • If you don’t have boneless, skinless chicken thighs, you can use boneless, skinless chicken breasts, but cook time may need to be slightly adjusted.
  • Serve with basmati rice or naan bread for a complete meal.
