1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 tbsp olive oil
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
2 cloves garlic, minced
6 cups chicken broth
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and black pepper to taste
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 tbsp cold butter, cut into small pieces
2/3 cup milk
Instructions
Season chicken pieces with salt and pepper.
Heat olive oil in the Instant Pot on the Saute function. Add chicken and cook until lightly browned on all sides. Remove chicken and set aside.
Add onion, carrots, and celery to the Instant Pot. Cook for 5 minutes, stirring occasionally, until softened.
Add minced garlic and cook for 1 minute more until fragrant.
Return chicken to the pot. Add chicken broth, thyme, and rosemary. Season with salt and pepper.
Secure the lid and set the valve to sealing. Cook on High Pressure for 8 minutes.
Once cooking is complete, perform a quick release of the pressure.
While the pressure is releasing, prepare the dumpling dough: In a medium bowl, whisk together flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Stir in the milk until just combined. Do not overmix.
Once the pressure is released, carefully open the lid. Stir the stew.
Drop spoonfuls of the dumpling dough onto the surface of the simmering stew.
Replace the lid (do not seal) and cook on the Saute function for 10-12 minutes, or until the dumplings are cooked through and fluffy.
Serve hot.
Notes
For a richer flavor, use chicken thighs instead of breasts.
