  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (19 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in the Instant Pot on the Sauté setting.
  2. Add chicken pieces, salt, and pepper. Cook until lightly browned, about 3-4 minutes. Remove chicken and set aside.
  3. Add onion, carrots, and celery to the Instant Pot. Cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
  6. Add Italian seasoning and red pepper flakes (if using).
  7. Return the browned chicken to the pot.
  8. Secure the lid and set the valve to sealing. Cook on High Pressure for 5 minutes.
  9. When the cooking cycle is complete, allow a natural pressure release for 5 minutes, then perform a quick release of any remaining pressure.
  10. Carefully open the lid. Stir in the refrigerated tortellini.
  11. Set the Instant Pot to Sauté and cook until the tortellini are tender, about 5-7 minutes.
  12. Stir in the heavy cream. Do not boil after adding cream.
  13. Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

  • For a thicker soup, you can thicken the broth with a cornstarch slurry (2 tablespoons cornstarch mixed with 2 tablespoons cold water) before adding the tortellini.
  • Feel free to add other vegetables like peas or spinach in the last few minutes of cooking.
  • Adjust seasoning to your preference.
