Make tender, saucy pulled pork right in your Instant Pot. Get that smoky BBQ flavor indoors, perfect for a winter comfort food fix.

Ingredients

  • Pork Shoulder (Boston Butt): 3 lbs
  • BBQ Rub (pre-mixed or homemade): 3 tablespoons
  • Apple Cider Vinegar: 1/2 cup
  • Brown Sugar: 1/4 cup
  • Worcestershire Sauce: 2 tablespoons
  • Liquid Smoke: 1 teaspoon (optional)
  • Your favorite BBQ Sauce: 1 cup

Instructions

  1. Trim excess fat from the pork shoulder.
  2. Rub the pork evenly with the BBQ rub.
  3. Pour the apple cider vinegar, brown sugar, Worcestershire sauce, and liquid smoke (if using) into the Instant Pot liner. Stir to combine the sauce base.
  4. Place the seasoned pork shoulder on the trivet inside the Instant Pot.
  5. Secure the lid and set the vent to sealing.
  6. Cook on High Pressure for 60 minutes.
  7. Allow for a Natural Pressure Release (NPR) for at least 15 minutes before manually releasing any remaining pressure.
  8. Carefully remove the pork and place it in a large bowl. Shred using two forks.
  9. Pour off any excess liquid from the pot, leaving about 1/2 cup of the cooking liquid.
  10. Return the shredded pork to the pot along with your BBQ sauce. Stir well to coat.
  11. Set the Instant Pot to Sauté mode for 5 minutes to let the sauce thicken slightly and coat the meat.
  12. Serve hot on buns or over coleslaw.

Notes

  • For an extra smoky taste, you can sear the pork on the Sauté function before pressure cooking.
  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the final Sauté step.
  • This recipe works well with a dry brine overnight for deeper flavor penetration.
