1 cup heavy cream
8 ounces semi-sweet chocolate, finely chopped
2 tablespoons unsalted butter, softened
1/4 cup Irish cream liqueur
1 teaspoon vanilla extract
Cocoa powder, for dusting
Instructions
Heat the heavy cream in a saucepan over medium heat until it just begins to simmer.
Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 5 minutes without stirring.
Whisk the chocolate and cream together until smooth and glossy.
Stir in the softened butter, Irish cream liqueur, and vanilla extract until fully combined.
Cover the bowl with plastic wrap, pressing it directly onto the surface of the chocolate mixture to prevent a skin from forming.
Refrigerate for at least 2-3 hours, or until firm enough to roll.
Scoop out tablespoon-sized portions of the chocolate mixture and roll them into balls using your hands.
Roll the truffles in cocoa powder until evenly coated.
Place the finished truffles in the refrigerator for at least 30 minutes before serving to firm up.
Notes
For a stronger Irish cream flavor, you can add an extra tablespoon of liqueur.
You can substitute milk chocolate or dark chocolate for semi-sweet chocolate, adjusting the sweetness as needed.
