1 (14.75 ounce) can pink salmon, drained well and bones/skin removed
1 large egg, lightly beaten
1/4 cup mayonnaise
1/4 cup finely chopped celery
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon Old Bay seasoning
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 cup Panko breadcrumbs, plus 1/4 cup for coating
2 tablespoons fresh dill, chopped
3 tablespoons vegetable oil, for frying
Instructions
In a medium bowl, flake the drained salmon using a fork. Remove any remaining small bones or skin pieces.
Add the beaten egg, mayonnaise, celery, lemon juice, Dijon mustard, Old Bay seasoning, pepper, and salt to the salmon. Mix gently until just combined. Do not overmix.
Stir in the 1/2 cup of Panko breadcrumbs and the chopped fresh dill until the mixture holds together. This is your secret binder for patties that do not fall apart.
Place the remaining 1/4 cup of Panko breadcrumbs on a shallow plate.
Form the salmon mixture into 6 equal-sized patties, about 1 inch thick. Gently press each side of the patties into the dry Panko breadcrumbs to coat lightly.
Heat the vegetable oil in a large non-stick skillet over medium heat.
Carefully place the patties in the hot oil, ensuring not to crowd the pan. Work in batches if necessary.
Cook for 4 to 5 minutes per side, until golden brown and heated through.
Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve immediately with the Lemon Dill Aioli.
Notes
For a crispier texture, you can bake the patties at 400 degrees Fahrenheit for 15 minutes, flipping halfway through.
If you prefer an air fryer method, cook at 375 degrees Fahrenheit for 10 to 12 minutes, flipping once.
To make the Lemon Dill Aioli, mix 1/2 cup mayonnaise, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, and 1 tablespoon chopped fresh dill.
These patties taste great served with tartar sauce as an alternative dipping option.
