Make this easy, large-batch punch featuring strawberry, coconut, and pineapple flavors for your next gathering. This recipe includes options for both alcoholic and non-alcoholic versions.

  • 1 (12 ounce) can frozen, thawed, concentrated pineapple juice
  • 1 (10 ounce) package frozen strawberries, thawed
  • 1 (15 ounce) can cream of coconut (do not use coconut milk)
  • 4 cups pineapple juice, chilled
  • 4 cups club soda or lemon-lime soda, chilled (optional, for fizz)
  • 1 (750 ml) bottle white rum or vodka (optional, for alcoholic version)
  • Ice cubes
  • Fresh strawberries and pineapple wedges, for garnish

Instructions

  1. Combine the thawed pineapple juice concentrate, thawed strawberries, and cream of coconut in a large punch bowl or container. Use an immersion blender or standard blender to mix until completely smooth.
  2. Stir in the 4 cups of chilled pineapple juice.
  3. If making the alcoholic version, stir in the entire bottle of white rum or vodka now.
  4. Cover the mixture and chill in the refrigerator for at least 2 hours to allow flavors to meld.
  5. Just before serving, gently stir in the chilled club soda or lemon-lime soda, if using. Do not over-stir to keep the fizz.
  6. Add large blocks of ice to the punch bowl to keep the drink cold without diluting it quickly.
  7. Garnish the punch bowl with fresh strawberry slices and pineapple wedges.
  8. Serve immediately in glasses filled with ice.

Notes

  • For a non-alcoholic version, simply omit the rum or vodka and use ginger ale instead of club soda for extra flavor.
  • You can prepare the base mixture (steps 1 through 3) up to 24 hours ahead of time. Keep it covered and chilled. Add the soda and ice just before guests arrive.
  • To make individual servings, blend 1/2 cup of the punch base with 1/2 cup of crushed ice and a splash of soda for a frozen drink consistency.
