  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers. Remove the seeds and membranes from the inside.
  3. Carve jack-o’-lantern faces into the sides of the peppers.
  4. Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned. Drain off any excess grease.
  5. Add chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
  6. Stir in the diced tomatoes, cooked rice, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  7. Remove the skillet from the heat and stir in the shredded cheddar cheese.
  8. Spoon the filling evenly into the hollowed-out bell peppers.
  9. Place the stuffed peppers upright in a baking dish. You may need to trim the bottoms slightly to help them stand.
  10. Bake for 30-40 minutes, or until the peppers are tender and the filling is heated through.
  11. Serve hot and enjoy your spooky creation!

  • For a vegetarian option, use plant-based ground meat or a mixture of black beans and corn as the filling.
