A rich, low-carb alternative to classic mac and cheese using tender cauliflower florets smothered in a velvety, high-fat cheese sauce.

  • 1 medium head cauliflower, cut into small florets
  • 4 tablespoons unsalted butter
  • 4 ounces cream cheese, cubed
  • 1 cup heavy whipping cream
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon xanthan gum (optional, for extra thickness)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
  2. Steam or boil the cauliflower florets until they are tender-crisp, about 5 to 7 minutes. Drain them very well and place them in the prepared baking dish.
  3. In a medium saucepan over medium heat, melt the butter. Add the cream cheese cubes and stir until they are mostly melted.
  4. Pour in the heavy whipping cream. Whisk constantly until the mixture is smooth.
  5. Reduce the heat to low. Gradually add the shredded cheddar and Monterey Jack cheese, stirring until the cheese is fully melted and the sauce is smooth.
  6. Stir in the salt, pepper, and garlic powder. If you want a thicker sauce, whisk in the xanthan gum now until no lumps remain.
  7. Pour the cheese sauce evenly over the cauliflower florets in the baking dish. Gently toss to coat everything.
  8. Bake for 15 to 20 minutes, or until the sauce is bubbly and the top is lightly golden brown.
  9. Let it cool for 5 minutes before serving.

Notes

  • For a roasted flavor, you can roast the cauliflower at 400 degrees for 15 minutes before adding the sauce and baking.
  • Use high-quality, full-fat cheeses for the best flavor and texture. Pre-shredded cheese often contains anti-caking agents that can make the sauce grainy.
  • If the sauce seems too thick after cooling slightly, stir in a tablespoon of heavy cream to loosen it.
