Make a classic Chicken Parmesan that fits your keto diet using almond flour for a crispy crust. Bake or air fry for a low-carb Italian dinner.

  • 2 boneless, skinless chicken breasts, halved horizontally (4 thin cutlets)
  • 1 large egg
  • 1 tablespoon water
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese, divided
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons avocado oil or olive oil (for pan-frying, optional)
  • 1/2 cup low-carb marinara sauce (check label for zero added sugar)
  • 4 ounces fresh mozzarella cheese, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. If using an air fryer, preheat to 375°F (190°C).
  2. Pound the chicken cutlets to an even 1/4-inch thickness.
  3. In one shallow bowl, whisk the egg and water together.
  4. In a second shallow bowl, combine the almond flour, 1/4 cup of the grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  5. Dip each chicken cutlet first into the egg wash, letting excess drip off.
  6. Dredge the cutlet thoroughly in the almond flour mixture, pressing firmly so the coating adheres well.
  7. Place the coated cutlets on the prepared baking sheet. If you prefer a crispier crust, lightly spray or brush the tops with oil.
  8. Bake for 15 minutes. Flip the cutlets, top each with marinara sauce, then top with mozzarella cheese and the remaining 1/4 cup of Parmesan cheese.
  9. Return to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature of 165°F or 74°C).
  10. Alternatively, for air frying: Cook coated cutlets at 375°F (190°C) for 10 minutes, flip, top with sauce and cheese, and cook for 3 to 5 more minutes until done.

Notes

  • For extra crispiness, you can lightly pan-fry the coated cutlets in oil for 2 minutes per side before adding sauce and cheese and finishing in the oven.
  • Use pork rinds instead of almond flour for a zero-net-carb crust option; crush them finely before mixing with seasonings.
  • Always verify your marinara sauce ingredients to ensure no added sugar is present to maintain keto compliance.
