1/2 cup unsalted butter, softened
1/2 cup erythritol or your preferred keto sweetener
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar-free chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and keto sweetener until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the almond flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the sugar-free chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
