These Keto Christmas Cookies deliver real holiday flavor and great texture, proving that low-carb treats can be truly enjoyable.

Ingredients

  • Almond Flour
  • Erythritol or preferred keto sweetener
  • Butter, softened
  • Egg
  • Vanilla extract
  • Xanthan Gum
  • Baking Powder
  • Salt
  • Optional: Keto-friendly sprinkles or icing ingredients

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare baking sheets with parchment paper.
  2. In a bowl, cream together the softened butter and sweetener until light and fluffy.
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together the almond flour, xanthan gum, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. If the dough is too sticky, chill it for 15 minutes.
  7. Roll the dough out between two sheets of parchment paper to about 1/4 inch thickness.
  8. Use your favorite holiday cookie cutters to cut out shapes.
  9. Place the cutouts onto the prepared baking sheets.
  10. Bake for 8-10 minutes, or until the edges are lightly golden. Watch closely as keto cookies can brown fast.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  12. Decorate with keto icing or sprinkles once fully cooled.

Notes

  • Do not overbake; these cookies firm up significantly as they cool.
  • For best flavor penetration, chill the dough for at least an hour before cutting.
  • If you skip the xanthan gum, your cookies may crumble easily.
  • We tested this recipe multiple times to get the perfect snap without a gritty texture.
