Prepare a light, creamy, and sugar-free lemon cheesecake mousse that fits a ketogenic diet. This no-bake dessert is quick to make and offers a bright, refreshing flavor.

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered erythritol or preferred keto sweetener
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Place the softened cream cheese in a medium bowl. Beat with an electric mixer until smooth and creamy.
  2. In a separate, chilled bowl, whip the heavy cream until stiff peaks form. Set aside.
  3. Add the powdered sweetener, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Beat until just combined and smooth. Scrape down the sides of the bowl.
  4. Gently fold the whipped cream into the cream cheese mixture using a spatula until no streaks remain. Do not overmix.
  5. Spoon the mousse into small serving dishes or ramekins.
  6. Chill in the refrigerator for at least 2 hours before serving to allow it to set.

Notes

  • For a firmer texture, chill the mixture for 4 hours or more.
  • Garnish with extra lemon zest or a few fresh raspberries before serving.
  • If you prefer a slightly tangier flavor, increase the lemon juice by one teaspoon.
