  • 1/4 teaspoon dried thyme
  • 1/4 cup ketchup (sugar-free or keto-friendly)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon erythritol or preferred keto sweetener

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard loaf pan or line a baking sheet with parchment paper if you prefer a free-form loaf.
  2. In a large bowl, combine the ground beef, almond flour, crushed pork rinds, egg, heavy cream, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
  3. Form the mixture into a loaf shape and place it in the prepared pan or on the baking sheet.
  4. In a small bowl, whisk together the ketchup, apple cider vinegar, Dijon mustard, and keto sweetener to create the glaze.
  5. Spread about two-thirds of the glaze evenly over the top of the meatloaf. Reserve the remaining glaze for later.
  6. Bake for 45 minutes.
  7. Remove the meatloaf from the oven and brush the remaining glaze over the top.
  8. Return to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let the keto meatloaf rest for 10 minutes before slicing. This helps it hold its shape.
