1 pound yellow squash, thinly sliced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 large eggs, lightly beaten
1/4 cup chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup shredded cheddar cheese (optional, for topping)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the sliced yellow squash, heavy cream, grated Parmesan cheese, beaten eggs, chopped chives, salt, and pepper.
Stir everything together until well combined.
Pour the mixture into the prepared baking dish.
