1 cup unsweetened almond milk
1/2 cup frozen strawberries (or less for stricter keto)
2 tablespoons cream cheese, softened
1/4 cup heavy whipping cream
1 scoop unflavored or vanilla keto protein powder (optional)
1 teaspoon vanilla extract
1 tablespoon keto-friendly sweetener (monk fruit or erythritol), adjust to taste
1/2 cup ice cubes
Instructions
Place the almond milk, frozen strawberries, cream cheese, heavy cream, protein powder (if using), vanilla extract, sweetener, and ice cubes into a high-speed blender.
Secure the lid and blend on high until the mixture is completely smooth and creamy.
Stop the blender and scrape down the sides if necessary. Blend again briefly if needed to incorporate all ingredients.
Taste the smoothie and add more sweetener if desired. If the smoothie is too thick, add a splash more almond milk and blend.
Pour immediately into a glass and serve.
Notes
For a thicker, milkshake-like texture, reduce the amount of almond milk or increase the amount of ice.
If you want a stronger cheesecake flavor without adding more fat, increase the vanilla extract slightly.
Use only a small amount of strawberries or substitute with a few drops of strawberry extract mixed with keto sweetener to keep net carbs very low.
