  • 1 tablespoon sesame oil
  • 1 pound cauliflower florets, riced
  • 1/2 cup thinly sliced yellow onion
  • 1/2 cup julienned carrots
  • 1/2 cup chopped broccoli florets
  • 1/4 cup sliced red bell pepper
  • 4 ounces firm tofu or cooked chicken, cubed (optional)
  • For the Sauce:
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • For Garnish:
  • 1 tablespoon sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. Prepare the sauce: In a small bowl, whisk together soy sauce, gochujang, rice vinegar, honey or maple syrup, minced garlic, and grated ginger. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add the riced cauliflower and cook, stirring occasionally, for 5-7 minutes, until tender-crisp.
  4. Add the sliced yellow onion, julienned carrots, chopped broccoli florets, and sliced red bell pepper to the skillet. Cook for another 3-5 minutes, until the vegetables are tender-crisp.
  5. If using tofu or chicken, add it to the skillet and cook until heated through.
  6. Pour the prepared sauce over the cauliflower and vegetables. Stir well to coat everything evenly. Cook for 1-2 minutes more, until the sauce has thickened slightly.
  7. Divide the Korean BBQ cauliflower rice among serving bowls.
  8. Garnish with sesame seeds and thinly sliced green onions.

Notes

  • For a spicier sauce, add more gochujang.
  • Feel free to add other vegetables like mushrooms or zucchini.
