1 lb ground beef (80/20 recommended)
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
4 cloves garlic, minced
1/2 teaspoon black pepper
1/4 cup water or beef broth
1 tablespoon cornstarch
Cooked white or brown rice, for serving
Optional toppings: Sliced green onions, toasted sesame seeds, fried egg
Instructions
In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, ginger, garlic, and black pepper. This is your bulgogi sauce base.
In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spoon until it is fully browned. Drain off any excess grease.
Pour the prepared bulgogi sauce base over the cooked ground beef in the skillet. Stir to coat the meat evenly.
In a separate small cup, whisk the cornstarch and water (or broth) together until smooth.
Pour the cornstarch slurry into the skillet with the beef mixture. Stir constantly as the sauce thickens, about 1 to 2 minutes. The sauce should coat the beef well.
Remove the skillet from the heat.
To assemble the bowls, place a serving of cooked rice in each bowl. Spoon the ground beef bulgogi mixture over the rice.
Garnish with sliced green onions and toasted sesame seeds. Add a fried egg if desired.
Notes
For a spicier flavor, add 1 teaspoon of gochujang (Korean chili paste) to the sauce base.
You can substitute ground turkey or ground pork for the ground beef. Adjust cooking time slightly if needed.
