1 pound Italian sausage
1 medium onion, chopped
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
4 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup lasagna noodles, broken
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil for garnish (optional)
Instructions
In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Drain excess fat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for 1 minute more until fragrant.
Pour in the crushed tomatoes and chicken broth. Add oregano, basil, salt, and pepper. Bring the mixture to a boil.
Add the broken lasagna noodles and cook according to package directions, or until tender.
Stir in the heavy cream, mozzarella cheese, and Parmesan cheese. Cook until the cheeses are melted and the soup is heated through.
Serve hot, garnished with fresh basil if desired.
Notes
For a milder soup, use mild Italian sausage.
You can substitute ground beef or turkey for the Italian sausage.

If you don’t have lasagna noodles, you can use other short pasta shapes like rotini or penne.
