Foolproof Lasagna with Cottage Cheese

This is the easy lasagna recipe you need when you want rich, cheesy comfort food without the fuss. We fixed the common watery lasagna problem by using cottage cheese for a high protein filling.

  • 1 pound ground beef or Italian sausage
  • 1 (24 ounce) jar quality pasta sauce
  • 1 (15 ounce) container cottage cheese (full fat recommended)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 9 oven-ready lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease. Stir in the pasta sauce and simmer for 5 minutes.
  3. In a medium bowl, mix together the cottage cheese, egg, Parmesan cheese, oregano, garlic powder, salt, and pepper. This is your high protein lasagna filling.
  4. Spread a thin layer of the meat sauce mixture on the bottom of the prepared baking dish.
  5. Arrange three lasagna noodles over the sauce.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  8. Spoon half of the remaining meat sauce over the mozzarella.
  9. Repeat the layers: three noodles, the remaining cottage cheese mixture, one-third of the mozzarella, and the rest of the meat sauce.
  10. Top with the final three noodles and the remaining mozzarella cheese.
  11. Cover the baking dish tightly with aluminum foil.
  12. Bake for 25 minutes. Remove the foil and bake for an additional 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  13. Let the baked pasta rest for 10 minutes before slicing and serving.

Notes

  • Using oven-ready noodles keeps this recipe easy and cuts down on prep time significantly.
  • For an even richer flavor, substitute half the cottage cheese with ricotta cheese if you prefer.
  • If your sauce seems too thick, add 1/4 cup of water to the sauce while simmering to help the dry noodles hydrate during baking.
