Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1 teaspoon dried culinary lavender buds
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the honey, dried lavender buds, and vanilla extract until well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. The dough will be soft. You can chill it for about 30 minutes if it’s too sticky to handle, or proceed directly.
  7. On a lightly floured surface, gently roll out the dough to about 1/4-inch thickness.
  8. Cut out shapes using your desired cookie cutters.
  9. Carefully transfer the cookies to the prepared baking sheet.
  10. Bake for 20-25 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure you use culinary-grade lavender.
  • Adjust the amount of lavender to your preference. Start with less if you are unsure.
  • These cookies are best stored in an airtight container at room temperature.
