This is a simple, one-pot Lazy Lasagna Soup recipe. You get all the rich flavor of lasagna without the layers or the cleanup hassle. It is comforting, creamy, and perfect for a quick weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup small pasta shells or ditalini
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup ricotta cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Stir in oregano, basil, and red pepper flakes if using. Bring the mixture to a simmer.
  4. Add the small pasta shells. Cook according to package directions, usually 8-10 minutes, stirring occasionally to prevent sticking.
  5. Reduce heat to low. Stir in the cream cheese cubes until completely melted and the soup is creamy.
  6. Remove the pot from the heat. Stir in the ricotta cheese and Parmesan cheese until smooth. Season with salt and pepper to your taste.
  7. Ladle the soup into bowls. Top each serving with an extra dollop of ricotta, a sprinkle of Parmesan, and fresh parsley.

Notes

  • You can substitute ground turkey or ground beef for the Italian sausage.
  • For a richer flavor, use beef broth instead of chicken broth.
  • If the soup thickens too much upon standing, add a splash of extra broth when reheating.
