Ingredients

Scale
  • 4 cups leftover stuffing
  • 2 large eggs, lightly beaten
  • 1/4 cup milk or broth
  • 2 tablespoons melted butter or oil

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. In a medium bowl, combine the leftover stuffing, beaten eggs, milk or broth, and melted butter or oil. Mix gently until just combined. Do not overmix.
  3. Lightly grease the waffle iron, even if it’s non-stick.
  4. Spoon about 1/2 to 3/4 cup of the stuffing mixture onto the hot waffle iron, spreading it evenly.
  5. Close the waffle iron and cook for 5-8 minutes, or until golden brown and crisp. The cooking time will vary depending on your waffle iron.
  6. Carefully remove the stuffing waffle and place it on a wire rack. Repeat with the remaining stuffing mixture.
  7. Serve immediately with your favorite brunch toppings.

Notes

  • You can add shredded cheese, cooked bacon bits, or herbs to the stuffing mixture for extra flavor.
  • If your stuffing is very dry, you may need to add a little more liquid.
  • If your stuffing is very moist, you may need to add a tablespoon or two of flour or breadcrumbs.
