Ingredients

  • Fresh or frozen blueberries: 1 1/2 cups
  • Powdered sugar (for glaze): 1 cup
  • Milk or water (for glaze): 2-3 tablespoons

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set this aside.
  3. In a large bowl, cream together the softened butter until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Mix in the yogurt (or sour cream), lemon zest, lemon juice, and vanilla extract until just combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix the batter.
  7. Gently fold in the blueberries using a spatula. If using frozen blueberries, do not thaw them first.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the loaf cool in the pan for 10 minutes before carefully inverting it onto a wire rack to cool completely.
  11. While the loaf cools, prepare the glaze: Whisk together the powdered sugar, milk (or water), and lemon juice until smooth. Add more liquid one teaspoon at a time if the glaze is too thick.
