1 whole chicken (about 3-4 pounds)
2 tablespoons olive oil
2 tablespoons Dijon mustard
1 lemon, zested and juiced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken dry with paper towels.
In a small bowl, whisk together olive oil, Dijon mustard, lemon zest, lemon juice, minced garlic, thyme, rosemary, salt, and pepper.
Rub the marinade all over the chicken, making sure to get some under the skin of the breast.
Place the chicken in a roasting pan.
Roast for 1 hour to 1 hour and 15 minutes, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C) and the juices run clear.
Let the chicken rest for 10-15 minutes before carving.
Notes
For extra flavor, you can stuff the chicken cavity with lemon halves and fresh herbs before roasting.
Baste the chicken with pan juices every 20-30 minutes during roasting for a moister result.
