A simple recipe for making tender, flavorful roasted chicken thighs using fresh lemon and garlic.

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs dry thoroughly with paper towels. This helps achieve crispy skin.
  3. In a small bowl, mix the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper to create the marinade.
  4. Place the chicken thighs in a baking dish or on a rimmed baking sheet.
  5. Pour the marinade over the chicken, rubbing it evenly over the skin and underneath, if possible.
  6. Arrange the chicken thighs skin-side up, ensuring they are not touching.
  7. Roast for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh.
  8. For crispier skin, you can briefly switch the oven to the broil setting for the last 1 to 2 minutes, watching closely to prevent burning.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra flavor infusion, you can tuck thin slices of lemon and a few whole garlic cloves around the chicken thighs in the baking dish.
  • If you want to use fresh herbs, substitute 1 tablespoon of fresh chopped rosemary or thyme for the dried versions.
  • Serving these chicken thighs with roasted potatoes or a simple green salad makes a complete meal.
